1 lb. organic shelled edamame
1 cup fresh shelled peas
2 Tbsp. safflower or sunflower oil
1/2 Tbsp. Kosher salt
1.5 tsp. ground cumin
3/4 tsp. ground coriander
2.5 Tbsp. chopped garlic
2 Tbsp. fresh chopped ginger
2 Tbsp. Soom™ Foods tehina
1/2 cup water
1/2 cup freshly squeezed lemon juice
1 tsp. salt
Bring a sauce pot to a boil and add salt and edamame: cook for 10 minutes.
Before draining, add in fresh peas; drain all well.
Place in food processor and add remaining ingredients; puree until smooth.
Correct seasoning and chill for at least one hour
Use as a hummus dip or as a sandwich spread with shaved vegetables on a good grain bread!
