Chicken Breast
1 cup Chicken Stock
1 cup onions
6 Fresh Apricots (chopped)
Salt & Pepper to Taste
Coconut Oil

Cauliflower and Tomato Salad
1 Head of Cauliflower, chopped
2 Medium Size Tomatos, chopped
2 Tablespoons of Soom Foods Tehina (order here!
1/4 Cup Lemon Juice

1. In a large skillet, heat 2 teaspoons of coconut oil.
2. Add grilled chicken with spices, cook until lightly brown (not all the way cooked).
3. Add the onions, and cook until translucent.
4. Pour in the chicken stock and bring to a boil.
5. Bring everything to a simmer and add the chopped apricots. Cook for 15 minutes.

Cauliflower and Tomato Salad
1. Bring water to boil, add the cauliflower, cook with lid for 10 minutes. Strain, and put the cooked cauliflower in a bowl.
2. Add the chopped tomatos and mix together.
3. Stir together Soom Foods Tehina and lemon juice. Add to the bowl and mix together.

We used a large tupperware, and therefore could put a lid on it and shake to mix together.
**While yummy cold, we found that this salad was even more delicious when heated up!
